WAGYU STEAK SKEWERS WITH GRILLED FENNEL

This recipe was written by Björn Terhorst for Europe's largest barbecue magazine, FIRE & FOOD. The Wagyu steaks were coated with a thyme glaze. They were served with grilled fennel and a vinaigrette.



Ingredients for 4 people


For the skewers

600 g Wagyu Skirt Steak , alternatively: Tataki
1 tsp Salt flakes
1 tsp Andaliman pepper
5 branches thyme
3 tbsp Maple syrup
1 tbsp olive oil
 

For the fennel

1 fennel
to taste Salt flakes
to taste Brown sugar
to taste olive oil
2 tbsp Honey
2 tbsp olive oil
2 tsp Mustard
1 Juice of an organic orange
1 Red chili
to taste Salt & pepper


Japanese beef skewers

A light and quick recipe for Wagyu skewers with a thyme glaze. Perfect for your next barbecue.

preparation

  1. For this recipe, you will need a direct and indirect heat zone at approximately 220 degrees Celsius. Since the fennel takes longer to cook than the skewers, you should start with the skewers.
  2. Quarter the fennel, brush the cut surfaces with olive oil, and sprinkle with a little salt and a pinch of sugar. Grill the fennel directly over the heat for 2-3 minutes on each side. Once the fennel has developed a nice char, move it to the indirect heat zone. While the fennel is cooking, you can prepare the meat and other ingredients.
  3. Place the peppercorns in the mortar. Andaliman pepper brings wonderful citrus aromas, but you can also use another type of pepper. Crush the peppercorns and add the salt flakes , oil, syrup, and thyme leaves to the mortar. Grind everything again.
  4. Cut the Wagyu steak into strips and add them to the marinade. Mix everything well and then skewer the pieces of meat. The small skewers will cook very quickly, so first make sure the fennel is almost done. It should cook indirectly for about 20 minutes.
  5. Now prepare the vinaigrette. Combine the oil, orange juice, and mustard, and whisk well until thoroughly blended. Stir in the honey, the deseeded and very finely chopped chili, and season the vinaigrette with salt and pepper.
  6. Now grill the skewers directly on both sides for 1-2 minutes. The syrup will allow the sugar to caramelize quickly. Arrange the fennel with the vinaigrette and the Wagyu steak skewers on a plate.
